Recipe: Heirloom Tomato Salad

Heirloom Tomato Salad

 

Ingredients

  • 2 cups mixed mesclun greens
  • 2 tablespoons red-wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper
  • Assorted heirloom tomatoes, sliced or quartered
  • Creamy Chive Dressing (recipe follows)
  • Blue cheese, crumbled
  • Chives for garnish

 

Directions

  1. Place greens in a bowl.
  2. Toss with the vinegar and oil and season with salt and pepper.
  3. Transfer to a platter.
  4. Arrange tomatoes over greens, sprinkle with salt, and drizzle with chive dressing.
  5. Sprinkle blue cheese over top and garnish with a few fresh chives.

 

 

Creamy Chive Dressing

  • 3 tablespoons red-wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 heaping tablespoon prepared mayonnaise
  • 1/4 cup fresh chives, chopped
  • Salt and freshly ground black pepper
  • 1/2 cup canola oil

 

Directions

  1. Combine all ingredients in a blender and blend until smooth.
