Holiday Party Beef Tenderloin

  1. Tie (you can ask your butcher to do this step) and season a beef tenderloin. I use garlic and cracked black pepper.
  2. Before cooking beef, sear it on all sides to give it a nice brown crust. This helps to keep in the natural juices and decreases cooking time.
  3. Cook the roast beef at 375 degrees for about 25 minutes. The internal temperature should be 125 degrees. (If, like me, you have a convection oven, cook it at 350 degrees for about 20 minutes.)
  4. Allow the meat to rest for at least 15 minutes before carving so the juices can redistribute throughout the beef.
  5. Enjoy your beef tenderloin with your company!
